Cabernet Sauvignon: An Accident That Took the World

Consider the most planted wine grape on earth. Cabernet Sauvignon did not exist before roughly the seventeenth century. Somewhere in Bordeaux, a Cabernet Franc vine and a Sauvignon Blanc vine cross-pollinated without anyone intending it, a seed fell, a seedling grew, and someone noticed the fruit was worth keeping. The parentage stayed a mystery until 1997, when Carole Meredith and her colleagues at the University of California, Davis, used DNA fingerprinting to settle it. From both parents the variety received a family of aroma compounds called methoxypyrazines, which read as bell pepper, dried herb, or cut grass depending on site and ripeness, receding in warm vintages and speaking up in cool ones. From Cabernet Franc it took thick skin and late ripening, which is why the wines are darkly colored, firmly tannic, and built to wait. Because grapevines are propagated by cutting rather than seed, every Cabernet Sauvignon vine alive is effectively a clone of that first seedling. The differences between the Médoc, Napa, Coonawarra, and Maipo are differences of place and hand, not of plant.
