Japanese sake, or nihonshu, holds a deep historical significance in Japan, intertwined with its cultural and religious practices for over a thousand years.

The process begins with rice polishing, or seimai, which removes the outer bran layers of the rice kernel to expose the starch-rich core. The degree to which the rice is polished significantly impacts the sake’s style; a higher polishing rate typically results in a more refined and delicate sake. After polishing, the rice is washed, soaked, and then steamed to create the ideal texture for fermentation.

Kōji mold is then introduced to a portion of the steamed rice to convert the starches into fermentable sugars, a process known as saccharification. This enzymatic transformation is essential, as sake production lacks the direct conversion of sugars, as seen in winemaking. What makes sake production unique is the use of a process called multiple parallel fermentation, where saccharification and fermentation occur simultaneously in the same vessel. This allows for a higher alcohol yield compared to other fermentation processes. After fermentation, the mash is pressed to separate the liquid from the solids, and the sake is pasteurized and aged for a period before bottling.

In fiscal 2023, the total value of sake exports was 41.08 billion yen, a decrease to 87% compared to the previous year, while the volume dropped to 29,000 liters, which represents 81% of last year’s quantity. However, despite this decrease, there is a continued trend of exporting higher-value sake, with "premium" offerings driving much of the market growth. The export value per liter, which rose from an average of 650 yen in 2013 to 1,407 yen in 2023, highlights a significant shift toward higher-end, more expensive sake globally.


Key Markets: Where Sake is Thriving

China remains the top destination for Japanese sake in terms of export value, with 12.47 billion yen exported in 2023, representing 88% of last year's figures. While this shows a slight decline, China continues to dominate as the most lucrative market for sake, driven by its popularity among affluent consumers who regard it as a prestigious beverage. However, factors such as the economic slowdown and a decline in demand from high-end Japanese restaurants have tempered this growth.


In contrast, the United States leads in terms of export volume, though sales in 2023 also saw a reduction to 71.6% of last year’s levels. This decline is attributed to inventory adjustments from 2022, inflation, and reduced consumer confidence due to staff shortages across the hospitality sector. Nevertheless, the U.S. remains a critical market for sake, particularly in metropolitan areas where Japanese cuisine and premium beverages are well-received.


While the two largest markets for sake have faced headwinds, other countries are showing growth. Exports to South Korea and Taiwan have increased significantly, with South Korea’s export value rising by 115.1% and Taiwan’s by 120.5% over the previous year. European countries like Italy, Spain, and Brazil are also seeing increased demand, reflecting a broader global interest in sake.


Sales Channels and Opportunities for Expansion

The international success of sake has primarily been concentrated within Japanese restaurants, where it is often the preferred pairing for sushi and traditional Japanese dishes. However, this limited distribution network presents both a challenge and an opportunity. Sake remains poorly recognized in many parts of the world outside these culinary contexts, suggesting that broader education and outreach efforts could unlock new markets. The Japan Sake Brewers Association and Japanese tourism officials are pushing initiatives such as sake campaigns at major international airports and brewery tours aimed at inbound tourists, aiming to increase visibility and consumption.


Inbound tourism to Japan, which recovered to approximately 80% of pre-pandemic levels in 2023, further presents an opportunity to elevate sake’s profile. Tourists visiting Japan often gain exposure to sake at its source, fostering demand upon returning to their home countries. Local sake brewery tourism and sales campaigns targeting international travelers could play a key role in boosting both domestic and export sales in the coming years.





The Premium Sake Trend

One of the defining trends of the current sake market is the rise of premium offerings. As consumers globally develop a taste for higher-end, artisanal beverages, sake producers have responded by elevating the quality and price point of their exports. The average export value per liter has more than doubled over the past decade, with especially high values recorded in markets like China, Hong Kong, and Singapore, where premium sake frequently commands over 2,000 yen per liter.


This focus on premium products is reshaping the market, as sake producers shift away from exporting larger volumes of lower-cost products toward smaller quantities of high-value offerings. In 2023, this trend continued, with the export value per liter reaching a record high despite the overall decline in volume. This indicates that while fewer bottles of sake are being sold globally, those that are being sold command a higher price and, presumably, greater prestige.


Although the global market for Japanese sake faced notable challenges in 2023, the long-term outlook remains promising, particularly in markets like South Korea, Taiwan, and Europe. The continued rise in premium sake exports underscores a broader shift in consumer preferences toward high-quality, artisanal products, which bodes well for the future of sake in the international beverage landscape. As the industry navigates economic uncertainties and capitalizes on new opportunities, the global recognition of sake is likely to expand, solidifying its place in the world’s evolving beverage culture.
